Hiroshimayaki class

(traditional Hiroshima style Japanese Pancake)

History:

The roots of Hiroshima style Japanese Pancake is called “Issen-Youshoku”. 

Issen Youshoku is – cook mixture of flour with water and put spring onion or simple ingredients, then fold in half and put sauce on top.

 After the war, it became popular to cook dough thinly and put cabbage, bean sprouts, pork belly slices and stir fried noodle or egg when food distribution became stable. 

The point is lots of cabbage; about adult’ handful amount (150g) and using soba noodle or udon noodle is standard.

Kawara-soba class

(traditional fried sona noodle on the roof tiles)

History:

“Kawarasoba” is representative soul food of Yamaguchi prefecture. 

It is cooked with cha-soba(green tea kneaded), kinshi tamago (thin sliced egg) and beef served with piping hot roof top tyle (called Kawara) and dip in noodle soup then eat. It is normally served with lemon and Momojioroshi grated radish with chili pepper and you can also enjoy the taste changing. “Kawarasoba” is made on 1961. 

Kawatana Onsen Ryokan wanted to make original popular food. 

People heard the story that soldier was eating meat and wild grass cooked with roof top tile and that became a hint. 

Original Ryokan closed the business and “Kawarasoba” also once ended the history, but Kawarasoba restaurant opened due customers’ request and now other Ryokan and restaurants are serving Kawarasoba.
